VALERIE'S BEST MUFFINS | |
1/2 c. saffola oil 1/2 c. brown sugar 1 1/3 c. skim milk (nonfat) 3 lg. egg white 1/2 c. dark or light molasses 1 c. all purpose flour 1 c. whole wheat flour 2 c. unprocessed wheat bran 2 tbsp. baking powder 1/2 tsp. salt 1 c. each raisins and chopped walnuts or pecans Honey (optional) Heat oven to 400 degrees. Spray 24 medium muffin cups with Pam. Mix first 5 ingredients well, sift together all dry ingredients. Quickly add liquid to dry in large bowl mixing just until all moist. Add raisins and nuts. Fill muffin cups 2/3 full. Bake 15 minutes or until test done with toothpick. Lightly drizzle honey over warm muffins. Store covered in refrigerator. |
