BANANA BRAN MUFFINS 
2 c. bran
1 c. buttermilk
1/4 c. molasses
2 tbsp. butter, melted or oil
1/2 c. bananas, mashed
2 eggs, well beaten (or 2 egg whites)
1/2 c. white flour
1/2 c. whole wheat flour
3 tsp. baking powder
1/2 tsp. baking soda
1/2 tsp. salt

Combine first 6 ingredients. Let stand for 15 to 20 minutes. Combine remaining ingredients and stir into bran mixture. Fill greased muffin tins 2/3 full. Bake at 350 degrees 15 minutes or until tests done with toothpick.
