FRUITY BANANA BREAD | |
1/2 c. butter 3/4 c. sugar 2 eggs 1 3/4 c. all purpose flour 2 3/4 tsp. baking powder 1 c. mashed bananas, ripe 1 c. dried fruit 1/2 c. chopped walnuts Beat the butter until creamy. Gradually add the sugar, beating until light and fluffy. Add the eggs. In separate bowl, combine the dry ingredients. Mix well. Add dry ingredients to butter mixture. Blend well. Stir in bananas and chopped fruit. Add only a third of the nuts. Pour the batter into a greased loaf pan. Sprinkle with remaining nuts. Bake at 350 degrees for 70 minutes or until tester comes out clean. Cool 20-30 minutes. Serves 12 slices. |
