CLAM CAKES 
5 cans minced clams
1 tsp. baking powder
1/2 tsp. salt
2 c. flour
2 eggs, beaten
1 c. milk

Drain clams, reserving 1/2 cup clam liquid. Sift dry ingredients together. Add dry ingredients to clams alternately with eggs and milk. Stir in reserved clam liquid, mixing well. Drop clam mixture by spoonfuls into deep hot fat. Fry until golden brown. May add cracker crumbs to clam mixture before frying if desired.
