6 c. sifted flour 4 tsp. baking powder 1/2 tsp. salt 1 1/2 c. shortening 3 c. brown sugar 2 eggs, beaten well 2 tsp. vanilla Yields: 10 dozen Sift flour, baking powder and salt together. Cream shortening and sugar until fluffy. Add eggs, vanilla; mix well. Add dry ingredients. Optional: Divide dough into 6 portions. Leave one (1) plain and make the following variations. Shape each piece of dough into a roll. CHILL. When firm, slice very thin and bake at 375 degrees for 10-12 minutes. 1) CHOCOLATE - Add 2 ounces chocolate, melted. 2) COCONUT - Add 1/2 cup shredded coconut. 3) FRUIT - Add 1/3 cup raisins or chopped dates. 4) NUT - Add 1/2 cup finely chopped walnuts or pecans. 5) SPICE - Add 1/2 teaspoon cinnamon and 1/4 teaspoon nutmeg. |
