SPINAKOPITA 
1 lb. fillo dough
Melted butter

FILLING:

2 boxes frozen spinach, thawed and thoroughly squeezed out the water
1/4 lb. ricotta cheese
1/2 lb. feta cheese
2 eggs, beaten
1 chopped sm. onion
1/2 c. Parmesan cheese

Combine all ingredients until thoroughly mixed and set aside. Divide fillo dough sheets in half in a large pan layer sheets brushing in between each sheet with melted butter. Pour the spinach mixture, then repeat with remaining fillo sheets in the same manner until all finished. With sharp knife, cut it to any shape you like (diamonds, squares or triangles). Bake at 325 degrees for approximately an hour or until golden.
