SWEET POTATO SOUFFLE | |
3 c. cooked mashed sweet potatoes 1/2 c. evaporated milk (add a little water) 2 eggs, unbeaten 1/2 c. sugar 1 tsp. butter 1/3 c. butter Mix well and put in baking dish, 8"x8"x2". TOPPING: 1 c. brown sugar 1 c. shredded coconut 1 c. chopped pecans 1/4 c. flour 1/3 c. melted butter Mix and spread on top of sweet potatoes. Bake in 375 degree oven for 20 minutes. Serves 8. |
