PEACH COBBLER 
1/2 c. sugar
1/4 tsp. ground cinnamon
4 c. sliced ripe peaches
1 tsp. lemon extract or grated rind
2 tbsp. cornstarch dispersed in 2 tbsp. water
1 c. all-purpose flour
2 tbsp. sugar, granulated
2 tsp. baking soda
1/2 tsp. salt
1/2 c. milk or buttermilk

Preheat oven to 400 degrees. Mix 1/2 c. sugar with cinnamon in a 2-quart saucepan. Stir in peaches, lemon extract or rind, and cornstarch-water mixture. Cook and stir until mixture thickens and boils. Pour mixture into a buttered 2-quart casserole and set aside.

Meanwhile, cut butter into flour, sugar, baking powder, and salt until mixture turns into fine crumbs. Stir in milk. Drop dough by 6 spoonfuls into hot peach mixture. Sprinkle with 2 tablespoons granulated sugar. Bake until topping turns to golden brown--20 to 30 minutes.

NOTE: Any fruits such as mangoes, canned sliced pineapple, etc., can be used as substitute for peaches.
