PEPPERMINT COOKIES 
1 c. shortening
1 c. sugar
1 egg
3 tsp. vanilla
3 c. flour
1 tsp. baking powder
1/2 tsp. salt
6 tbsp. milk
2 tsp. peppermint extract

Cream shortening and sugar. Blend in egg and vanilla. Sift dry ingredients alternating with milk. Add extract. Mix well and chill. Roll into balls and bake at 375 degrees for 10 minutes. Yield: 4 dozen cookies.
