SWEET POTATO CRANBERRY BREAD 
3 eggs
1 1/2 c. sugar
1 1/2 c. mashed sweet potatoes
1 c. oil
1 c. dried cranberries
2 1/4 c. flour
1 1/2 tsp. baking powder
1 1/2 tsp. cinnamon
1 tsp. salt
1/2 tsp. ground cloves
1/2 tsp. ginger
1/2 tsp. nutmeg
1/2 tsp. vanilla
1 1/2 tsp. baking soda

Preheat oven to 350°F.

In a large mixing bowl, combine eggs, sugar, sweet potatoes, oil and vanilla. Mix all dry ingredients and add to sweet potato mixture, stirring only enough to blend. Fold in cranberries.

Pour into 2 greased 8-inch loaf pans and bake at 350°F for 50 to 60 minutes.
