FROSTED COFFEE BARS 
1/2 c. shortening
1 c. brown sugar, finely packed
1 egg
1/2 c. hot strong coffee
1 2/3 c. all purpose flour
1/2 tsp. each baking powder, soda, cinnamon & salt
1/2 c. raisins
1/4 c. walnuts
1 1/2 c. sifted powdered sugar
1 tbsp. soft butter
1 tsp. vanilla
About 3 tbsp. hot strong coffee

Cream shortening with sugar; blend in egg, then 1/2 cup coffee. Sift flour, measure and sift again with baking powder, soda, cinnamon and salt. Mix well with first mixture. Stir in raisins and walnuts. Spread batter in greased 11"x16" cookie pan and bake at 375 degrees for 15 minutes. Cool in pan. Blend powdered sugar, butter, vanilla and 3 tablespoons coffee (more coffee if needed), spread on cookies. When icing is set, cut in squares.

Makes 20 cookies, 2" square.
