CRANBERRY RING SALAD 
2 c. cranberries
1 1/2 c. cold water
1 c. sugar
1 tbsp. unflavored gelatin
1/2 c. chopped nuts
3/4 c. diced celery
Lettuce
Mayonnaise or whipped cream

Wash cranberries, add 1 cup cold water. Cook until tender. Add sugar and cook for five minutes. Soften gelatin in 1/2 cup cold water, dissolve in hot cranberries. Chill until mixture begins to thicken. Add nuts and celery. Mix thoroughly. Pour into oiled ring mold. Chill until firm. Unmold and place on large salad plate. Place lettuce around salad or serve on individual plates. Garnish with mayonnaise or whipped cream. Serves 8.
