STUFFED CABBAGE ROLLS | |
1 lg. head cabbage or 2 med. ones 3 lb. ground beef 1 1/2 c. uncooked rice Boil rice with salt about 5 minutes. 1/2 c. celery 1 green pepper 2 eggs 1/2 c. catsup or tomato soup 3 tbsp. salt for 3 lb. ground beef 1 tsp. pepper 1 can tomato paste Mix in all above ingredients, take core out of cabbage. Put in boiling water, cover for few minutes. Take leaves as they fall off and the leaves that are too small to wrap around meat, put in bottom of pan. Roll meat in cabbage, put in pan, don't quite cover cabbage rolls in water. Add tomato paste, cover or cook in pressure cooker for 10 minutes. When meat is done, add 2 tablespoons cornstarch with 1/2 cup water to juice in pan. Cook about 5 or 10 minutes or until thickened, in a 400 degree oven. |
