POTATO CHEESE PIE 
3 lbs. potatoes, peeled & cut into cubes
2 garlic cloves
6 tbsp. butter
1/2 c. grated Parmesan cheese
1/3 c. sour cream
2 eggs, beaten to blend
2 tbsp. bread crumbs
Salt & pepper
Cayenne pepper
1/2 c. minced onion
1 c. grated sharp cheddar
3 tbsp. Parmesan cheese
2 tbsp. butter

Boil potatoes in garlic, drain and mash with the garlic and 6 tablespoons butter. Add 1/2 cup Parmesan cheese, sour cream and eggs. Season with salt, pepper, cayenne and grated onion. Mash until fluffy. Put 1/2 mixture into pie plate. Cover with cheddar cheese. Top with remaining potato mix, sprinkle with Parmesan cheese and bread crumbs. Dot with 2 tablespoons butter, bake until brown and crusty, about 45 minutes at 350 degrees.
