RHUBARB PIE 
6 to 7 c. rhubarb, cut in 1 inch pieces
1 tbsp. grated orange rind
2 tbsp. flour
1 tsp. cinnamon
1 to 3/4 c. sugar, maybe more
1/4 tsp. salt
butter for dotting
Crust for double crust pie, unbaked

Combine all ingredients except butter. Pour into pie shell. Dot with butter. Cover with a lattice crust. Sprinkle with extra sugar and bake at 400 degrees until brown and bubbly.
