PAT'S WALNUT COFFEE CAKE | |
1 1/2 c. flour, sifted 1/2 tsp. salt 2 tsp. baking powder 3/4 c. sugar 4 tbsp. butter 1/2 c. milk 2 eggs TOPPING: 1 tbsp. flour 1/2 c. brown sugar 1 tsp. cinnamon 1 c. walnuts (optional) 2 tbsp. butter Combine flour (sifting is optional), salt, baking powder, sugar, shortening and milk in food processor. Process until mixed. Add eggs, mixing an additional minute, until mixed and smooth. For topping, combine 1 tablespoon flour, the brown sugar, cinnamon and walnuts. Add butter here if you want it. Mix well. I use the food processor for this. Do first if you are using processor. Spray pan with Pam. Pour half batter in pan, spread with half the topping. Then pour on rest of batter and rest of topping. Bake in 350 degree oven (if using glass pan, reduce heat to 325 degrees) for about 30 minutes. Serve warm. Sit back and wait for compliments. |
