HOT CROSS BUNS 
1 cake yeast
1 c. water, lukewarm
6 to 8 c. flour
3/4 c. butter, melted
3 eggs, beaten
1 c. sugar
1 tbsp. cinnamon
1 tbsp. ginger
1 tsp. nutmeg
1 tsp. cloves

Mix yeast, water and 1 cup flour. Let rise until bubbly. Add rest of flour and rest of ingredients in order. Let rise until double in bulk. Shape into round flat buns. Brush with egg white and make crosses on top of each bun. Let rise on a greased baking sheet until double in size. Bake in hot oven 20 minutes. Makes 5 dozen.
