BANANA NUT BREAD 
3/4 c. butter
1 c. sugar
2 eggs
1/2 tsp. baking powder
1 tsp. baking soda
1/2 c. buttermilk
4 or 5 sm. very ripe bananas, mashed (about 2 c.)
1/2 c. chopped nuts
2 c. flour

Cream butter and sugar until fluffy. Beat in eggs, 1 at a time. Add buttermilk alternately with dry ingredients (which have been sifted together). Add mashed bananas and nuts. Pour into greased and floured loaf pans. Bake in 300 degree oven until it tests done, about 1 hour.

OPTIONAL INGREDIENTS:

1/2 c. chopped walnuts
1 tsp. vanilla
1 sm. can crushed pineapple

If using pineapple use only 1 1/2 cups mashed bananas.
