SHEPHERD'S PIE | |
6-8 med. sized potatoes (suitable for mashing) 1 1/2 lbs. ground beef 1 med. yellow onion 1 can beef broth 1 pkg. onion soup mix Salt & pepper to taste Boil and mash potatoes according to your favorite method. Don't substitute instant potatoes! (They are not Irish!) Saute beef; drain excess fat. Add onion (chopped). Continue to saute. When onions are tender, add beef broth and onion soup mix. Let beef mixture simmer (15 minutes). In shallow baking dish make a "lining" with mashed potatoes. (Make a mound of potatoes around the dish leaving the center open.) Spoon beef mixture into center of baking dish. Bake at 325 degrees for 30 minutes. Dish out with spatula. Serve with Irish soda bread or basic old American biscuits. |
