RICE PUDDING 
3/4 c. uncooked rice
3/4 c. sugar
1 qt. milk
1 egg, beaten
1 sm. can Carnation evaporated milk

Put rice in small saucepan and add enough water to cover rice. Add a pinch of salt and cook at medium heat until all the water evaporates. Stir occasionally. When finished, set aside.

Mix together sugar, milk, egg and evaporated milk. Then add rice and stir. Start baking at 400 degrees for 30 minutes, then open the oven. Sprinkle with cinnamon. Turn oven back to 350 degrees and bake for 1 hour and stir mixture every 15 minutes. Pudding will thicken as it cools.
