ARTICHOKE, MUSHROOM SALAD 
1 (14 oz.) can artichokes
1 (12 oz.) pkg. mushrooms
1 med. red onion

MARINADE:

1/2 c. olive oil
1/2 c. red wine vinegar
2 tsp. salt
1 clove minced garlic
1/2 tsp. thyme
1/2 tsp. oregano
1/4 c. parsley

Slice thinly the artichokes, mushrooms and onion. Mix marinade ingredients together and pour over vegetables. Marinate turning every 1/2 hour or so. This should be made the night before.
