MINTED LAMB KEBABS 
Meat:

1 lb. lean lamb, cut into cubes
2 onions, cut into large cubes
2 red peppers, cut into large cubes
6 spring onions, cut into 4-cm (1-1/2-inch) lengths

Marinade:

3 tbsp. chopped fresh mint
2 cloves garlic, crushed
2 tbsp. honey
1/2 cup vegetable broth
2 tbsp. vinegar
2 tbsp. oil

To prepare marinade, combine ingredients in a bowl. Add lamb, cover and marinate for at least 1 hour or overnight.

Thread lamb, onion, red pepper and spring onion pieces alternately onto skewers. Brush with remaining marinade and grill for 2 minutes each side or until golden brown and cooked. Serve with bread and salad.

Serves 4.
