MINIATURE FRUIT CHEESECAKES 
3 (8 oz.) pkgs. cream cheese
1 c. sugar
5 eggs
1 1/2 tsp. vanilla
1 c. sour cream
1/2 tsp. vanilla
1/2 c. sugar
Halved strawberries

Cream together cheese, 1 cup sugar, eggs and 1 1/2 teaspoons vanilla. Pour into paper cupcake cups (set in cupcake pan) or miniature foil cups. (Set in miniature pan.) Bake at 300 degrees for 30 to 35 minutes. Remove from oven. Cool 5 minutes.

Mix together sour cream, 1/2 teaspoon vanilla and 1/2 cup sugar. Place a spoonful of this mix atop each cupcake. Place a strawberry slice on top. Return to oven. Bake an additional 5 minutes. Cool and refrigerate or freeze. Makes 48 miniature or 24 cupcakes.
