CHEESE AND VEGGIE TACOS 
10 (6 inch) flour tortillas
2 tbsp. oil
2 1/2 c. broccoli florets
1 1/2 c. sliced fresh mushrooms
1 1/2 c. diced red bell pepper
1 c. green onions
2 c. shredded cheddar cheese
Guacamole (optional)
Dairy sour cream (optional)
Taco sauce (optional)

Heat oven to 400 degrees. Let tortillas stand at room temperature for 15 minutes. In a large skillet, heat oil over high heat. Add vegetables and stir-fry 2-3 minutes or until crisp-tender. Cool slightly. Stir in cheese.
