MOCK LOBSTER SALAD 
2 lbs. haddock
2 c. water
1 med. onion, sliced
3/4 c. sour cream
Salt and pepper
1/2 c. chili sauce
2 c. diced celery
2-3 tbsp. horseradish
1-2 tbsp. mayonnaise
Lemon juice

Simmer fish in water with sliced onion until fish turns white, about 5 minutes. Drain well and cool. Flake fish in large pieces. Mix with celery.

Combine mayonnaise, chili sauce, horseradish, and lemon juice. Mix with fish and refrigerate at least 2 hours. Stir well before serving, and taste for seasoning. Serve on a bed of lettuce with a light dusting of paprika, if desired. Serves 4-6.
