MANDARIN RICE SALAD | |
1 c. uncooked rice 1/4 tsp. salt 1/4 c. soy sauce 1/2 c. brown sugar 1/2 c. vegetable oil 1/2 c. dry roasted peanuts 1/4 c. raisins 1 tbsp. chopped green onions 4 oz. crushed pineapple, drained Cook rice 8 to 10 minutes. Chill. Mix together soy sauce, brown sugar, oil and salt; pour over chilled rice. Add peanuts, raisins, onions and pineapple; mix. Refrigerate. This keeps for days. Makes 6 to 8 servings. |
