ANNIE'S APPLE BUCKWHEATS 
2 egg whites or 1 egg
1 c. buttermilk
2 tbsp. oil
1/2 c. unbleached flour
1/2 c. whole wheat flour
1 tbsp. sugar
1 tsp. baking powder
1/2 tsp. baking soda
1/2 tsp. salt
1/4 tsp. nutmeg
1/4 tsp. cinnamon
1 med. apple, chopped

Beat egg or egg whites; add remaining ingredients in order listed and beat with rotary beater until smooth. Grease heated griddle with oil if necessary. To test griddle sprinkle with a few drops of water. If bubbles skittle around, heat is just right. Pour batter from tip of large spoon or from pitcher onto hot griddle. Turn as soon as puffed and bubbly. Low cholesterol pancakes with egg whites.
