SQUID LEANDER 
1 squid (prepared as in the stir fry recipe)
2 tbsp. cooking oil
2 rashers bacon, chopped
1/4 tsp. lemon juice, if available
2 spring onions, chopped
1 c. (No. 2) white sauce
1 sm. can shrimp or 1/2 c. frozen shrimp

Make white sauce (2 tablespoons butter, 2 tablespoons flour, salt, 1 cup milk).

When cooked, add drained shrimp. Keep warm with lid on saucepan. Heat a film of oil in pan, add bacon and cook slightly, add remaining oil and heat, then add squid and lemon juice. Stir fry 1 minute, sprinkle on spring onion. Lift from pan using a perforated spoon or fish slice, drain on absorbent paper, then add to sauce. Serve garnished with crisp fried noodles. Serves 4 or 8 as an entree.
