PARCHMENT SEAFOOD SPECTACULAR | |
2 halibut or other seafood steaks (6-8 oz. each) 1/2 tbsp. lemon juice 1 tbsp. butter 1 tbsp. brandy 1 tbsp. dried chives Salt and pepper to taste 1/2 c. (1 oz.) sliced fresh mushrooms 1 sm. apple, thinly sliced Parchment paper For each serving, place fish on a 10 x 15 inch piece parchment paper. Combine brandy and lemon juice; brush on fish. Dot each with butter, chives and season with salt and pepper. Mound mushrooms and apple on top. Bring paper up around fish. Fold edges over twice to seal top, fold side edges up. Microwave on High 7-9 minutes. Let stand 3 minutes. Serve packet directly on dinner plate. Serves 2. This can be made in aluminum foil tents in conventional oven. Bake at 350 degrees for 20-25 minutes. |
