CREAMY RUM RICE PUDDING | |
3/4 c. raisins 1 c. white rice 2 c. water 4 c. whole milk 2 c. whole milk = total used in recipe is 6 c. milk 4 egg yolks 1 tbsp. vanilla 1/4 c. rum or 3 tbsp. rum extract 1/2 c. sugar Dash salt Soak raisins in rum for approximately 4 hours or overnight. In saucepan add rice, water and salt. Bring to boil for 5 minutes. Drain and rinse in cold water and return to saucepan. Add 4 cups milk, sugar and bring to boil. Lower heat and simmer for approximately 25 minutes, uncovered or until most of milk is absorbed. In a bowl beat egg yolks lightly, add 2 cups milk, vanilla, raisins and 1 tablespoon rum or 1/4 tablespoon rum extract. Mix lightly. Pour into cooked rice and continue stirring until mixture is thickened. Do not let boil. Remove from heat and refrigerate. |
