APPLE PUFFED PANCAKE 
6 eggs
1 1/2 c. milk
1 c. flour
3 tbsp. sugar
1 tsp. vanilla
1/2 tsp. salt
1/4 tsp. cinnamon
1/4 lb. butter
2 apples, peeled & sliced
2-3 tbsp. brown sugar

Preheat oven to 425 degrees. In a blender or large bowl, mix eggs, flour, sugar, vanilla, salt and cinnamon until blended. Melt butter in 12 inch quiche dish or 13 x 9 inch baking dish. Add slices of apples. Return to oven until butter sizzles. Do not let brown.

Remove dish from oven and pour batter over apples. Sprinkle with brown sugar. Bake 20 minutes or until puffed and brown. 6-8 servings.
