OATMEAL COOKIES 
12 lb. granulated sugar
20 lb. brown sugar
17 lb. Primex
5 oz. baking soda
10 oz. salt
10 lb. eggs
10 oz. vanilla
10 lb. high gluten flour
6 lb. 4 oz. cake flour
23 lb. 10 oz. oatmeal (9 x 2 - 10)
6 lbs. raisins

Cream sugars, shortening, soda and salt. Beat in eggs and vanilla. Mix in flours completely then add oatmeal. Finally add raisins. Scale dough into 3 pound pieces. Shape dough into rolls, wrap with paper and refrigerate. Portion each roll into 15 cookies. Recipe can be reduced for home kitchen use. Bake at 350 degrees until done. Yield: 33 - 3 pound rolls.
