CHEESE & SPINACH PUFFS 
1 (10 oz.) pkg. frozen chopped spinach
1/2 c. chopped onion
2 eggs, slightly beaten
1/2 c. grated Parmesan cheese
1/2 c. shredded cheddar cheese
1/2 c. blue cheese salad dressing
1/4 c. butter, melted
1/8 tsp. garlic powder
1 (8 1/2 oz.) pkg. corn muffin mix

In saucepan combine spinach and onion, cook according to spinach package directions. Drain well, pressing out excess liquid. Combine eggs, cheeses, salad dressing, butter, and garlic powder. Add spinach mixture and muffin mix, mix well. Cover and chill. Shape dough into 1 inch balls. Cover and chill until serving time.

To serve, place puffs on a baking sheet. Bake in a 350 degree oven until light brown. Bake for 10 to 12 minutes. Serve warm. Makes about 60. Balls can be frozen before baking. Bake frozen puffs for 12 to 15 minutes.
