PECAN BANANA MUFFINS | |
3 ripe bananas, mashed 1 cup chopped pecans 1 cup brown sugar 1/2 cup butter 1 egg 1 tsp. vanilla 1/8 tsp. ground cloves 1/4 tsp. ground ginger 2 cups all purpose flour 1 tsp. baking soda Heat oven to 350°F. Grease muffin tins or use paper muffin liners. Crush bananas and set aside. Beat together brown sugar and butter. Beat in egg, vanilla, cloves and ginger. Add crushed banana and mix well. Add flour and baking soda and beat well. Stir in crushed pecans. Fill muffin tins to the top with batter. Bake at 350°F for 18 to 20 minutes or until toothpick inserted in center comes out clean.
