BANANA PECAN MUFFINS 
2 c. all-purpose flour
1 tbsp. baking powder
2 tbsp. sugar
1 tsp. salt
1/2 c. chopped pecans
1/4 tsp. ground nutmeg
1 egg
1 c. mashed, peeled bananas
1/3 c. milk
1/4 c. vegetable oil or butter, melted

Grease 12 muffin cups. Heat oven to 400 degrees.

Sift flour, baking powder, sugar and salt in a medium mixing bowl. Stir to mix well. Add pecans and nutmeg.

In a small bowl, beat egg with fork. Add bananas, milk and oil. Add all at once to dry ingredients. Stir mixture until ingredients are moistened. Batter will be lumpy.

Drop into prepared pans, filling each cup 2/3 full. Bake 15 to 20 minutes or until golden brown.
