PICKLED GREEN PEPPERS | |
3 lbs. lg. green peppers (9) Boiling water 2 c. distilled white vinegar 2 c. water 1 c. granulated sugar 8 garlic cloves 4 tsp. salad oil 2 tsp. salt Wash peppers; cut in half lengthwise. Remove seed pod and white "seams". Cut lengthwise into long wedge-shaped pieces. Pack peppers into hot sterilized jars. Cover with boiling water; let stand 5 minutes. Combine vinegar, water, and sugar; boil 5 minutes. Drain water from peppers. To each jar add 2 garlic cloves, 1 teaspoon oil and 1/2 teaspoon salt; pour boiling syrup over peppers to within 1/8 inch from top. Quickly seal each jar. Makes 4 pints. |
