BRAN MUFFINS 
4 eggs
1 qt. buttermilk
5 c. flour
3 c. sugar
5 tsp. baking soda
2 tsp. salt
1 tbsp. pumpkin pie spice
1 c. oil
1 (15 oz.) box raisin bran

In a large bowl, beat eggs and blend in buttermilk. Add flour, sugar, soda, salt, pumpkin pie spice. Mix in oil and bran flakes. Let set 24 hours. Can keep covered in the refrigerator 6 weeks. 6 muffins microwave 3 1/4 to 4 1/4 minutes or bake at 400 degrees for 15 minutes. Add dates etc. if desired.

Since microwave ovens vary in power, you may need to adjust your cooking time.
