LUSCIOUS LEMON COOKIES 
1 c. Darigold butter
1/2 c. powdered sugar
2 c. Western Family flour

Preheat oven to 350 degrees. Combine butter, 1/2 cup powdered sugar, an 2 cups flour and mix well. Press mixture into a 9 x 13 inch baking pan. Bake for 15 minutes or until nicely browned. Cool slightly.

FILLING:

4 eggs, beaten
2 c. sugar
1/4 c. flour
6 tbsp. lemon juice
1 tsp. grated lemon peel
Powdered sugar

In a separate bowl combine flour and sugar, mix together. Stir in beaten eggs, lemon juice and grated lemon peel. Pour into the slightly cooled cookie crust. Bake for 25 minutes at 350 degrees or until set. Cool and sprinkle with powdered sugar. Cut into squares. Makes about 36 bar cookies.
