LEMONY REFRIGERATOR CHEESECAKE 
1 1/2 c. graham cracker crumbs
1/3 c. melted butter
1 pkg. (6 oz.) lemon gelatin
2 c. boiling water
1 pkg. (8 oz.) cream cheese
1 lb. cottage cheese
1 c. (1/2 pt.) heavy cream, whipped
Desired topping

In a bowl, mix crumbs and butter. Press crumbs into the bottom and 2 inches up the side of a greased 9 inch springform pan. Chill. Dissolve gelatin in boiling water. Place cream cheese into a large bowl and gradually beat hot gelatin into cheese using an electric mixer. Stir in cottage cheese. Chill until slightly thickened. Fold in whipped cream. Pour cheesecake filling into lined pan. Chill until firm. Spread top with cooled desired topping. Chill until ready to serve.
