GARLIC MAYONNAISE | |
4 cloves garlic Salt and pepper to taste 2 egg yolks 1/2 tsp. dry mustard Crush garlic with a little salt to a smooth paste. Blend in egg yolks and dry mustard until mixture is smooth. Proceed to whisk or process the mixture with olive oil (drop by drop at first, then a fine trickle). The mayonnaise will thicken gradually until it reaches the proper thickness. Add lemon juice and more salt and pepper, if needed. Serves 4. |
