POTATO SALAD WITH GREEN ONION
SALAD DRESSING
 
4 med. potatoes, cooked, peeled & coarsely chopped
6 eggs, hard boiled & finely chopped
1/4 c. onion, chopped
1/4 c. celery, chopped
1/4 c. green pepper, chopped
3/4 tsp. cayenne
2 tsp. mustard
1 tsp. salt
1/4 tsp. white pepper
Green Onion Dressing (recipe below)

Mix all of above in large bowl and refrigerate.

GREEN ONION DRESSING:

1 egg plus 1 yolk
1 1/8 c. vegetable oil
1/2 c. green onion, finely chopped
1 1/2 tbsp. Creole mustard or brown mustard
1 tbsp. white vinegar
Pinch salt
1/8 tsp. white pepper

Blend egg and egg yolk in food processor or blender until frothy (about 2 minutes). With machine on, gradually add oil in a thin stream. When mixture is thick and creamy, add remaining ingredients and blend thoroughly. Refrigerate if not used immediately.
