PECAN CARAMEL COOKIES | |
1/2 lb. soft butter 1 c. granulated sugar 1 egg yolk 1 tbsp. vanilla 2 c. sifted flour 1 tbsp. cinnamon 1 1/2 c. med. chopped pecans Cream butter; add sugar, egg yolk and vanilla. Beat well and then add sifted flour and cinnamon and beat thoroughly. Spread mix into greased 11 x 16-inch tin--flatten with wet hands (MESSY). Brush top with slightly beaten egg white. Sprinkle with pecans and press down. Bake at 325 degrees for 35-40 minutes. |
