WATER CHESTNUT SALAD 
3 tbsp. salad oil
1 clove garlic
2/3 c. thinly sliced pork
1/2 c. minced green onion
6 raw shrimp, cleaned and cut into small pieces
4 tbsp. Soy sauce
2 tbsp. sugar
2 tbsp. lemon juice
1 1/4 c. water chestnuts, thinly sliced
Salt and pepper
Lettuce leaves
Parsley sprigs (optional)

Brown onion and garlic in hot salad oil. Add pork and stir fry until brown. Add shrimp and stir fry till done. Stir in Soy sauce, sugar and lemon juice. Cook over low heat, 2-3 minutes. Add water chestnuts and remaining seasonings. Stir fry another minute. Serve immediately on lettuce leaves and garnish with sprigs of parsley.
