BROCCOLI AND CAULIFLOWER SALAD 
1 lg. head cauliflower, cut into florets
1 lg. head broccoli, cut into florets
10 strips bacon, cut into pieces, fried crisp, drained and cooled
1 1/2 c. no-fat mayonnaise
1/2 c. sugar

Prepare bacon. Cut vegetables into a large bowl. Mix mayonnaise and sugar together. Combine all together. Prepare one day in advance or at least 4 hours before serving.

When plating the salad, place on a bed of green curly lettuce and garnish the top with shredded carrot.

Serves 15.
