SEAFOOD SALAD PLATTER | |
5 tbsp. mayonnaise 2 tsp. vinegar 1 c. water packed tuna, drained 1/3 c. chopped celery 1/4 c. sliced green onions 1/4 tsp. pepper 2 tbsp. cocktail sauce 8 oz. peeled cooked shrimp, chopped, or crabmeat 1/3 c. chopped water chestnuts 1/4 c. red pepper, chopped 1/2 lb. homemade potato salad In small bowl, stir together mayonnaise and vinegar. Mix 1/4 cup mayonnaise mixture with tuna, celery, green onion and pepper. Cover and refrigerate. Stir cocktail sauce into remaining mayonnaise mixture. In medium bowl, mix cocktail sauce mixture with shrimp, water chestnuts, and red pepper. Cover and refrigerate. Line serving platter with lettuce. Arrange tuna salad, shrimp salad and potato salad on bed of lettuce. Approximately 4 servings. |
