LEMON AND HERB CHICKEN 
4 chicken breasts
1 lemon
3 tbsp. dried mixed herbs
2 tsp. garlic puree
salt and pepper, to taste

Preheat the oven to 375°F (gas mark 5).

Grate the zest off of the lemon into a small bowl. Add in the mixed herbs. Juice the lemon and add to the mixture. Add in the garlic puree. Mix together, it should be quite thick but not dry.

Share the mixture between the chicken breasts. Bake in oven until the juices run clear.

Serve with sautéed potatoes, carrots and a nice white wine.

Serves 4.
