FRIED EGGPLANT | |
1 eggplant 1 egg, beaten Flour or meal Peel eggplant; cut into thin slices. Soak eggplant for 10 minutes in salted water. Dip eggplant in egg. Roll in flour. Fry in hot fat in skillet until browned. Drain on absorbent paper; serve. |
