WHOLE WHEAT BANANA BREAD 
1 1/4 c. all-purpose flour
1/2 c. whole wheat flour
1 tsp. baking soda
1/4 tsp. salt
1/2 c. sugar
1/4 c. oil
1 egg
1 c. mashed ripe banana
1 tsp. vanilla

Combine first 4 ingredients in a small bowl, stir well and set aside. Combine sugar and oil in a medium mixing bowl. Beat at medium speed of an electric mixer 2 minutes or until well blended. Add egg, beat until light and lemon colored.

With mixer at low speed, add flour mixture alternately with banana beginning and ending with flour mixture. Beat well after each addition. Stir in vanilla.

Pour batter into 8x4x2 inch loaf pan (greased). Bake at 350 for 45 minutes or until wooden pick inserted in center comes out clean. Cool 15 minutes in pan on rack, remove from pan and let cool on rack.
