FEATHER LIGHT SUGAR COOKIES | |
1 c. butter 1 c. powdered sugar 1 c. granulated sugar 2 eggs 1 c. oil 2 tsp. vanilla 1 tsp. ground lemon peel 4 1/2 c. flour 1 tsp. baking soda 1 tsp. cream of tartar 1 tsp. salt Cream butter and sugars. Beat in eggs, 1 at a time, until light and fluffy. Add oil, vanilla and lemon peel. Beat until well mixed. Combine dry ingredients and add to creamed mixture. Mix well. Wrap and chill for several hours. Divide dough into thirds. Refrigerate portions until ready to use. Form cookie by rolling teaspoon of dough into balls. Flatten with a glass that has been set in sugar. Bake on greased cookie sheet at 350°F for 10 minutes. Let set for 2 minutes before removing to cool. Makes 7 dozen. |
