TOMATO SALSA 
2 c. peeled & chopped ripe tomatoes
2 green chili peppers, seeded & chopped
2 tsp. olive oil
2 tbsp. red wine vinegar
1 sm. onion, finely chopped
1 clove garlic, finely chopped
1/2 tsp. oregano, dried
1 tbsp. coriander, chopped
Salt & pepper to taste

Combine all ingredients and refrigerate. Makes 1 pint.
